For anyone who read this morning’s post, and thought “50g of rice per person?! I eat more than that!!!“, this post is for you! For anyone who read it and thought “that sounds about right”, I’m sure you will still enjoy this post.
I came across this sneaky way of substituting out some rice for…wait for it…oh, I put it in the title. Yes, substituting cauliflower for some of your rice to bulk it out. You could even ditch the rice altogether as Detoxinista’s fried rice sans rice.
But wait, I hear what you are thinking: Cauliflower looks like this:
How does that resemble rice? Well you simply do this:
Yes, a couple of pulses in the blender, and a rice consistency forms. The trick here is to use raw cauliflower, otherwise you end up with cauliflower puree. Simply dry fry the cauliflower ‘rice’ with a splash of water, if necessary. You can do it with the rice if you like, add a touch of turmeric and no one will even know 🙂
Cauliflower is a good source of vitamin C, potassium and is low in calories – win, win!
